These 4-ingredient Lazy Cake Cookies are the perfect quick and easy treat when you're craving something sweet. Made with cake mix as the base, they come together in just 20 minutes and offer perfectly crispy edges with soft, chewy centers.

Ingredients
  

  • 1 box (15.25 oz/432g) yellow or white cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil (80 ml)
  • 1 cup semi-sweet chocolate chips (170g)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or spray with cooking spray.
  2. In a large bowl, combine cake mix, eggs, and vegetable oil. Mix until well incorporated with no dry pockets.
  3. Fold in chocolate chips until evenly distributed throughout the dough.
  4. Using a tablespoon or small cookie scoop, portion the dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
  5. Bake for 10-12 minutes, or until edges are set but centers still appear slightly soft.
  6. Let cookies rest on the baking sheet for 2-3 minutes before transferring to a wire rack to cool completely.

Notes

Feel free to customize these cookies with different mix-ins like butterscotch chips, nuts, M&Ms, or sprinkles. You can also use different cake mix flavors such as chocolate or strawberry for variety. For a healthier version, replace half the oil with applesauce. Gluten-free cake mix works well for a gluten-free version. Store in an airtight container at room temperature for up to 5 days.
