Crispy on the outside, creamy on the inside, these loaded mashed potato bites are packed with cheese, bacon, and herbs. They're perfect for transforming leftover mashed potatoes into delicious appetizers or snacks that can be customized with your favorite mix-ins.

Ingredients
  

  • 2 cups mashed potatoes cooled leftovers work best
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon cooked and crumbled
  • 2 tablespoons chives or green onions chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt adjust to taste
  • 1 large egg
  • ½ cup all-purpose flour
  • 1 cup breadcrumbs plain or seasoned
  • Oil for frying vegetable or canola

  • Large mixing bowl
  • Deep frying pan
  • Slotted spoon
  • Paper towels

Method
 

  1. In a large mixing bowl, combine cooled mashed potatoes, shredded cheddar cheese, crumbled turkey bacon, and chopped chives.
  2. Add garlic powder, black pepper, salt, and egg. Mix until well combined.
  3. Scoop about 1 tablespoon of mixture and roll into balls. If mixture is too soft, refrigerate for 15-20 minutes.
  4. Set up dredging station with flour in one dish and breadcrumbs in another.
  5. Roll each potato ball in flour, then coat thoroughly with breadcrumbs.
  6. Heat about 2 inches of oil in a deep pan to 350°F.
  7. Fry potato bites in batches until golden brown on all sides, about 2-3 minutes per batch.
  8. Remove with a slotted spoon and drain on paper towels.

Notes

These bites can be baked instead of fried at 425°F for 15 minutes for a lighter version. They freeze well for later use. For extra crispiness, try double coating by dipping in flour, beaten egg, then breadcrumbs. You can customize the recipe with different cheeses, herbs, or use regular bacon instead of turkey bacon. Make sure your mashed potatoes are completely cooled before forming the bites for best results.
