- Add mango, habanero pepper, white vinegar, honey, salt, and 2 tablespoons water to a blender.
- Blend until super smooth, adding extra water if needed to help blending.
- Transfer mixture to a small saucepan and simmer on low heat for 5-10 minutes, stirring occasionally.
- Taste and adjust honey or salt as needed.
- Optional: Strain through a fine mesh sieve for extra-smooth texture.
- Allow to cool completely before transferring to a bottle or jar.
- Refrigerate before serving.
Notes
Use caution when handling habanero peppers - wear gloves and avoid touching your eyes. Keep kitchen well-ventilated while cooking. The sauce keeps for several weeks in the refrigerator and flavors will continue to develop. For a milder version, use jalapeños instead of habanero. Can be customized with pineapple instead of mango, or by adding ginger and lime for variation.
