Ingredients

For the Pizza
  • 1 recipe pizza dough use homemade or 1 large premade crust
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons minced garlic
  • 4 medium Roma tomatoes thinly sliced
  • 3 cups Mozzarella cheese freshly grated
  • 1/4 cup Parmesan cheese freshly grated
  • 7 large basil leaves torn into small pieces
  • salt and pepper to taste

Equipment

  • Large pizza pan
  • Medium bowl
  • Brush
  • Knife

Method

  1. Set your oven to 450°F (230°C) and lightly grease a large pizza pan. Put the pan aside.
  2. Stir together the olive oil and minced garlic in a medium bowl. Add the sliced tomatoes and toss to coat. Let them marinate for 15 minutes, then drain the tomatoes and reserve the flavored oil.
  3. Roll or stretch the pizza dough onto the prepared pan. Brush the dough with the reserved garlic oil, then sprinkle the mozzarella and Parmesan evenly over the surface. Arrange the marinated tomato slices over the cheese.
  4. Bake in the preheated oven for 15 minutes or until the crust is golden at the edges. Remove carefully from the oven.
  5. Scatter the torn basil leaves over the hot pizza. Allow it to rest for 5 minutes before cutting. Finish with salt and pepper to taste, then slice and serve.

Notes

For best results, use fresh mozzarella and Parmesan for maximum flavor and melt. If you opt for store-bought dough, let it come to room temperature for easier stretching. Patting the tomato slices dry after marinating helps prevent a soggy crust. Leftover pizza can be stored in the refrigerator for up to 3 days; reheat slices in a covered skillet or in a moderate oven for a crisp crust. Avoid freezing assembled pizza, as the fresh tomatoes and basil won't hold up well after thawing.
