Method
- Prepare all your fresh ingredients while keeping the hummus in its container. Dice the English cucumber into small 1/4-inch cubes and transfer to a bowl. Quarter the cherry tomatoes and halve the kalamata olives, keeping them in separate bowls. Finely chop the fresh parsley. This advance preparation prevents scrambling during assembly and keeps the hummus from drying out.
- Spread the hummus evenly into a shallow serving dish, such as a 9-inch pie dish. Use an offset spatula or the back of a spoon to create a smooth, even layer, leaving the surface slightly rustic with small peaks and valleys to help hold the toppings in place.
- Layer the prepared vegetables and herbs over the hummus base in concentric circles or sections for visual appeal. Begin with the diced cucumber, then add the quartered tomatoes, followed by the halved olives. Distribute the feta cheese crumbles evenly across the top, then finish with the chopped fresh parsley. Drizzle the extra virgin olive oil over everything and sprinkle the dried oregano as a final touch.
- Serve the dip immediately with pita chips, vegetables, or flatbread on the side for dipping. Serving right away ensures the hummus stays creamy and the vegetables maintain their crispness.
Notes
This dip is best assembled and served immediately, as the fresh vegetables release moisture over time and can make the hummus watery. If you need to prep ahead, chop and store all vegetables separately in the fridge, then layer everything just before guests arrive. English cucumber is preferred over regular cucumber because it has fewer seeds and less water content. For a dairy-free or vegan version, swap the feta for a plant-based alternative or omit it and add extra olives or toasted pine nuts. Leftovers can be refrigerated in an airtight container for up to 1 day, though the texture won't be as fresh.
