- In a pitcher, combine the blackberry juice (or strained purée) with honey or simple syrup and lemon juice. Stir until sweetener is completely dissolved.
 - Taste the blackberry base and adjust sweetness if needed, as blackberries can vary in tartness.
 - For a decorative rim (optional), dip the edges of glasses in corn syrup, then into black sanding sugar.
 - Fill glasses with ice cubes, preferably larger ones to prevent quick dilution.
 - Pour the blackberry base halfway up each glass.
 - Top with chilled sparkling water or club soda.
 - Gently stir just enough to combine the layers without destroying the carbonation.
 - Garnish with fresh blackberries and serve immediately.
 
Notes
To make your own blackberry purée, blend about 3 cups of fresh blackberries with 1/4 cup water, then strain through a fine mesh sieve to remove seeds.
The blackberry base can be prepared up to two days ahead and refrigerated, but always add the sparkling water just before serving to maintain carbonation.
For a boozy version, replace some of the sparkling water with prosecco. For a sweeter variation, substitute half the sparkling water with lemon-lime soda. You can also create a "Graveyard Float" by adding a small scoop of vanilla sherbet for a foggy effect.
