Ingredients
  

Berry Bliss Mocktail
  • 3/4 cup mixed berries fresh or thawed
  • 2 orange slices thin
  • 1/2 oz fresh lime juice (15 ml)
  • 1/2-1 oz simple syrup or honey (15-30 ml), to taste
  • 4-5 oz lemon-lime soda or sparkling water (120-150 ml)
  • 1 mint sprig for garnish
Cucumber Ginger Refresher
  • 5 cucumber slices plus more for garnish
  • 1 oz fresh lime juice (30 ml)
  • 1/2 oz ginger syrup (15 ml) (or 1 tsp grated ginger + 1/2 oz simple syrup)
  • 3 oz ginger beer (90 ml, non-alcoholic)
  • club soda to top
Tropical Sunrise Mocktail
  • 2 oz pineapple juice (60 ml)
  • 2 oz orange juice (60 ml)
  • 1/2 oz fresh lime juice (15 ml)
  • 1/4-1/2 oz simple syrup (8-15 ml), to taste
  • 3 oz ginger ale or sparkling water (90 ml)
  • 1 orange wedge or pineapple frond for garnish

Method
 

Berry Bliss Mocktail
  1. Muddle mixed berries with orange slices in a sturdy glass until well crushed.
  2. Add fresh lime juice and simple syrup or honey.
  3. Fill glass with ice and top with lemon-lime soda or sparkling water.
  4. Gently stir and garnish with mint sprig.
Cucumber Ginger Refresher
  1. In a tall glass, muddle cucumber slices with lime juice and ginger syrup for 10-15 seconds.
  2. Fill glass with ice and add ginger beer.
  3. Top with club soda, stir gently, and garnish with cucumber.
Tropical Sunrise Mocktail
  1. Shake pineapple juice, orange juice, lime juice, and simple syrup with ice for 5-8 seconds.
  2. Strain into an ice-filled glass.
  3. Top with ginger ale or sparkling water and stir once to combine.
  4. Garnish with orange wedge or pineapple frond and serve immediately.

Notes

Quality of ingredients matters significantly in mocktails - use the freshest fruits and juices for best results. All recipes can be made less sweet by substituting sparkling water for sodas. For the ginger syrup, you can make your own by simmering 1 cup each of water, sugar, and sliced ginger for 8-10 minutes, then steeping and straining. Keeps for two weeks refrigerated.
