- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook chicken sausage and chopped onion, breaking up the sausage with a wooden spoon, until meat is browned and onion is translucent, about 5-7 minutes. Drain excess grease.
- Coat a 9-inch deep-dish pie plate with cooking spray or butter.
- Spread the cooked sausage and onion mixture evenly in the bottom of the prepared pie plate.
- Sprinkle Monterey Jack and Cheddar cheese over the sausage layer.
- In a medium bowl, whisk together milk, flour, baking powder, salt, pepper, and eggs until smooth.
- Pour the egg mixture over the sausage and cheese layers.
- Bake for 30-35 minutes, or until the center is set and top is golden brown.
- Let rest for 5 minutes before slicing and serving.
Notes
For best results, use freshly grated cheese instead of pre-shredded for better melting. The recipe can be customized using different types of sausage (turkey, pork, or vegetarian crumbles) or cheese varieties like Swiss or Gruyère. You can add vegetables like bell peppers, spinach, or mushrooms to the sausage mixture. The pie can be prepared ahead and reheats well.
