- In a large microwave-safe bowl, combine peanut butter, butterscotch chips, and chocolate chips (if using).
- Microwave in 30-second intervals, stirring between each interval, until completely melted and smooth.
- Gently fold in the chow mein noodles and shredded coconut (if using) until evenly coated.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Refrigerate for about 30 minutes or until firm.
Notes
Store in an airtight container at room temperature for 5-7 days. For best results, use quality peanut butter (natural kinds may separate and affect consistency). You can substitute butterscotch chips with white chocolate or peanut butter chips, and swap peanut butter with almond or sunflower seed butter for allergies. The chow mein noodles can be replaced with crispy rice cereal, broken pretzel sticks, or potato sticks.
