  • 1 pound smoked beef sausage sliced into rounds
  • 1 pound baby potatoes halved or quartered if large
  • 12 ounces fresh green beans trimmed
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • 1 to taste salt and pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 to taste fresh parsley or grated Parmesan for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
  2. In a large bowl, combine sliced beef sausage, halved baby potatoes, and trimmed green beans.
  3. Drizzle olive oil over the mixture and add garlic powder, onion powder, smoked paprika, dried parsley, salt, pepper, and red pepper flakes (if using).
  4. Toss everything together until evenly coated with oil and spices.
  5. Spread mixture in a single layer on the prepared baking sheet.
  6. Roast for 30-35 minutes, flipping halfway through, until potatoes are fork-tender with golden edges, green beans are tender-crisp, and sausage is heated through.
  7. Garnish with fresh parsley or grated Parmesan if desired and serve hot.

Notes

For best results, use quality smoked beef sausage with visible spices. Baby red potatoes or fingerlings work best as they roast quickly. While fresh green beans are preferred, frozen can be used if thawed and patted dry first. The recipe is highly adaptable - try different sausages (chicken, turkey, or plant-based), swap vegetables, or experiment with seasonings like Italian or Cajun spices.
