A delicious Italian-inspired twist on traditional meatloaf made with ground chicken and Parmesan cheese. This lighter version is packed with savory flavors and topped with marinara and melted mozzarella for a satisfying family dinner.

Ingredients
  

  • 1.5 pounds ground chicken
  • 1 cup breadcrumbs plain or Italian style
  • 0.5 cup Parmesan cheese grated
  • 1 large egg
  • 0.5 cup milk
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 2 tablespoons fresh parsley chopped (or 1 teaspoon dried)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup mozzarella cheese shredded, for topping
  • 0.5 cup marinara sauce for topping

Method
 

  1. Preheat oven to 375°F. Grease a 9x5-inch loaf pan or line with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, egg, and milk.
  3. Add minced garlic, chopped onion, parsley, Italian seasoning, salt, and black pepper. Mix gently until just combined, being careful not to overmix.
  4. Transfer mixture to the prepared loaf pan, shaping into an even loaf without packing too tightly.
  5. Bake for 40-45 minutes, until nearly cooked through and internal temperature is close to 165°F.
  6. Spread marinara sauce over the top and sprinkle with mozzarella cheese. Return to oven for about 5 minutes until cheese is melted and bubbly.
  7. Let rest for 10 minutes before slicing and serving.

Notes

For best results, use ground chicken that's not too lean to keep the meatloaf moist. You can substitute ground turkey for chicken if preferred. The meatloaf can be made gluten-free by using crushed rice crackers or gluten-free breadcrumbs. Freshly grated Parmesan will give the best flavor. Leftovers make excellent sandwiches and the recipe is perfect for meal prep.
