Ingredients
  

For the Pecan Balls
  • 1 ½ cups pecans finely chopped, toasted for best flavor
  • 1 cup graham cracker crumbs
  • ½ cup brown sugar packed
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 3 tablespoons light corn syrup or maple syrup
  • 1 teaspoon pure vanilla extract
  • ½ cup pecan halves optional, for garnish or texture
For the Coating
  • 6 ounces Halal-certified chocolate milk, dark, or white, melted for dipping or drizzle

Method
 

  1. Arrange the finely chopped pecans on a baking sheet and toast them in a 350°F (175°C) oven for 6 to 8 minutes, stirring once. Let the nuts cool completely before using.
  2. Combine the graham cracker crumbs, brown sugar, cinnamon, and salt in a medium bowl. Stir until blended evenly.
  3. Add the light corn syrup (or maple syrup) and vanilla extract to the bowl. Stir with a spatula until a thick, sticky dough forms.
  4. Mix in the cooled toasted pecans, stirring until the mixture is evenly coated and holds together when squeezed.
  5. Roll about 1-inch portions of the dough into balls using your hands or a small cookie scoop, and set them on a tray lined with parchment paper.
  6. Chill the tray in the refrigerator for at least 30 minutes so the balls become firm before dipping.
  7. Microwave the Halal-certified chocolate in 20-second bursts, stirring after each interval, until melted and smooth. Dip each ball halfway or fully, then return to the parchment-lined tray and allow the chocolate to set.
  8. Store the pecan pie balls in an airtight container in the refrigerator for up to one week, or freeze for up to one month.

Notes

For best flavor and texture, chop the pecans finely and toast them until fragrant but not dark. If the mixture seems too dry, add a little extra syrup or a splash of water; if too sticky, add more graham crumbs. Milk, dark, or white chocolate work equally well for coating based on your preference. To make ahead, keep refrigerated for up to a week or freeze in a single layer before storing in an airtight container for a month. Serve chilled or at room temperature, and consider pressing a pecan half on top for decoration before dipping in chocolate.
