Ingredients
  

  • 3/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 cup butter melted (or oil for dairy-free version)
  • 3/4 cup chocolate chips
  • 2 cups dried fruit chopped (apricots, cranberries, raisins, etc.)
  • 8 large egg whites beaten
  • 1/2 cup nonfat dry milk powder
  • 2 1/2 cups nuts chopped (almonds, walnuts, pecans, etc.)
  • 3/4 cup rolled oats
  • 1 teaspoon salt
  • 1/4 cup sesame seeds
  • 1/4 cup wheat germ
  • 3/4 cup whole wheat flour

Method
 

  1. Preheat your oven to 350°F (175°C) and thoroughly grease a 9x13 inch baking pan.
  2. In a large bowl, beat together the egg whites and melted butter (or oil if using).
  3. In a separate bowl, sift together the whole wheat flour, wheat germ, baking powder, nonfat dry milk powder, rolled oats, salt, and brown sugar.
  4. Add the dry ingredients to the egg mixture and stir until just combined.
  5. Fold in the chopped dried fruit, chopped nuts, chocolate chips, and sesame seeds until evenly distributed.
  6. Spread the mixture evenly in the prepared baking pan, pressing it down slightly with a spatula or your fingertips.
  7. Bake for approximately 30 minutes. The bars may still seem slightly soft when removed from the oven.
  8. Allow the pan to cool completely before cutting into 24 pieces.
  9. For best results, wrap each piece individually in foil and store in the freezer until needed.
