Method
- Score both sides of the flank steak in a diamond pattern about 1/8 inch deep using a sharp knife.
 - In a small bowl, combine oil, lemon juice, 1/2 teaspoon salt, pepper, and crushed garlic to create the marinade.
 - Melt butter in a pan over medium heat. Add thinly sliced onions and 1/4 teaspoon salt. Cook until tender and translucent, stirring occasionally. Keep warm.
 - Brush half of the marinade mixture onto one side of the scored steak.
 - Place the steak under the broiler, about 3 inches from the heat source, and broil for 5 minutes.
 - Flip the steak, brush the remaining marinade on the second side, and broil for another 5 minutes for medium-rare doneness.
 - Remove from broiler and let rest for 5 minutes.
 - Slice the meat thinly across the grain and serve topped with the buttery onions.
 
Notes
For the most tender results, be sure to slice the meat very thinly and always cut across the grain. If flank steak isn't available, top round makes an excellent substitute. For a deeper flavor profile, try adding balsamic vinegar or soy sauce to the marinade.
This London Broil pairs beautifully with roasted garlic mashed potatoes, steamed asparagus, or a peppery arugula salad. Leftovers can be refrigerated for up to 3 days and make excellent sandwiches.
