Ingredients
  

  • 4 slices thick-cut white, sourdough, or Italian bread
  • 4 slices mozzarella cheese or provolone/cheddar mix
  • 2 tablespoons halal butter softened
  • 1 tablespoon olive oil
  • 2 cloves garlic minced (or 1 teaspoon garlic powder)
  • 1 tablespoon fresh parsley chopped (or 1 teaspoon dried parsley)
  • 2 tablespoons halal Parmesan cheese grated
  • 1 pinch salt

Method
 

  1. In a small bowl, combine softened butter, olive oil, minced garlic, chopped parsley, grated Parmesan cheese, and salt. Mix until well blended.
  2. Spread the garlic butter mixture evenly on one side of each bread slice.
  3. Place 2 slices of bread butter-side down in a skillet over medium heat.
  4. Layer 2 slices of mozzarella cheese on each bread slice in the pan.
  5. Top with remaining bread slices, butter-side up.
  6. Cook for 3-4 minutes until bottom is golden and crispy.
  7. Carefully flip sandwiches and cook another 3-4 minutes until golden and cheese is melted.
  8. Slice and serve while warm.

Notes

This casserole is highly adaptable - you can substitute the beef with chicken, turkey, or mushrooms for a vegetarian version. The cheese can be swapped for Swiss, cheddar, or pepper jack. Add roasted red peppers or jalapeños for extra heat. Leftovers taste even better the next day as the flavors deepen overnight in the fridge.
