Ingredients
  

  • 16 oz cream cheese softened
  • 1 cup crushed pineapple well-drained
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup pecans finely chopped (for inside)
  • 1/2 cup green bell pepper finely chopped
  • 2 tablespoons green onion finely chopped
  • 2 tablespoons red bell pepper finely chopped (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt or to taste
  • 1 cup pecans finely chopped (for coating)

Method
 

  1. Beat softened cream cheese in a large mixing bowl until smooth and creamy.
  2. Add the well-drained crushed pineapple, shredded cheddar cheese, 1/2 cup chopped pecans, green bell pepper, green onion, red bell pepper, garlic powder, onion powder, and salt.
  3. Mix all ingredients thoroughly until well combined.
  4. Transfer mixture onto plastic wrap and shape into a ball.
  5. Refrigerate until firm (at least several hours or overnight).
  6. Before serving, roll the cheese ball in the remaining cup of finely chopped pecans, pressing them gently into the surface.

Notes

Make sure to drain the pineapple extremely well to prevent a soggy cheese ball. For best results, prepare this appetizer a day ahead to allow flavors to meld. Can be stored in the refrigerator for up to 5 days. Serve with an assortment of crackers, baguette slices, or fresh vegetables. For variations, try using walnuts instead of pecans or add a dash of Worcestershire sauce for extra flavor.
