Ingredients
  

  • 1 pinch Kosher salt optional, if using unsalted butter
  • 1 pinch Smoked paprika optional
  • 1 teaspoon Fresh parsley finely chopped, optional
  • Freshly ground black pepper to taste
  • 1-3 tablespoons Cooked bacon finely crumbled
  • 2 cloves Roasted garlic mashed
  • 1/2 cup Unsalted butter softened to room temperature (1 stick/113g)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Cut the top off a whole head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until cloves are soft and golden.
  3. Allow garlic to cool, then squeeze out 2 cloves for this recipe.
  4. In a bowl, combine the softened butter, mashed roasted garlic, crumbled bacon, and black pepper.
  5. Add optional ingredients if using: a pinch of salt, chopped parsley, and/or smoked paprika.
  6. Mix until well combined but still retaining some texture from the bacon.
  7. Spoon the butter mixture onto a piece of parchment paper or plastic wrap.
  8. Roll into a tight log about 1½ inches thick, twisting the ends to seal completely.
  9. Refrigerate until firm, about 1 hour, or freeze for 20-30 minutes to speed up the process.
  10. When ready to use, slice the butter into coins and serve.
