- Preheat oven to 375°F.
- Cut a pocket lengthwise into each chicken breast, being careful not to slice all the way through.
- In a small bowl, combine chopped spinach, roasted red peppers, shredded mozzarella, and Italian seasoning.
- Stuff each chicken breast with the spinach-pepper-cheese mixture. Secure with toothpicks if needed.
- Rub chicken breasts with olive oil and season with salt, pepper, garlic powder, and paprika.
- Heat a large oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
- Transfer skillet to preheated oven and bake for 15-20 minutes, or until chicken reaches internal temperature of 165°F.
Notes
For best results, use whole milk mozzarella for maximum meltiness. You can use jarred roasted red peppers or roast your own. Make sure chicken breasts are similar in size for even cooking. The filling can be prepared ahead of time. Secure the stuffed pockets well with toothpicks to prevent the filling from leaking during cooking. Remember to remove toothpicks before serving.
