Ingredients
  

  • 2 pounds beef roast
  • 3 cups water
  • 1 cup light soy sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 bay leaf
  • 3 peppercorns
  • 4 French rolls or baguette for serving

Method
 

  1. Place beef roast in the slow cooker.
  2. Add water and light soy sauce to the slow cooker.
  3. Add dried rosemary, dried thyme, garlic powder, bay leaf, and peppercorns.
  4. Cover and cook on low for 5-6 hours.
  5. Remove meat from the broth and shred using two forks.
  6. Strain the remaining liquid to remove herbs and spices, then skim off any fat from the top to create the au jus.
  7. Warm the French rolls or baguette slices.
  8. Pile shredded beef onto the bottom half of each roll.
  9. Serve each sandwich with a small bowl of au jus for dipping.

Notes

Chuck roast works best, but you can also use rump roast or bottom round. Use good quality light soy sauce for the best flavor. The bread should be slightly crusty on the outside but soft inside to properly soak up the au jus without falling apart. For extra flavor, you can brown the meat before adding it to the slow cooker. Leftover beef and au jus can be stored in the refrigerator and reheated for additional meals.
