Method
- Brown the smoked sausages in a skillet over medium heat until they develop a golden crust.
- Add the sliced bell peppers, mushrooms, minced garlic, and chopped onion to the skillet with the sausages.
- Stir-fry the mixture for about 5 minutes, until the vegetables begin to soften but still maintain some texture.
- Pour in the zesty Italian dressing and allow it to bubble and reduce until almost completely evaporated, stirring occasionally to coat all ingredients.
- Season with salt and pepper to taste.
- Place one sausage and half of the vegetable mixture onto each tortilla.
- To wrap, tuck in the sides first, then roll from the bottom up, keeping the filling secure without tearing the tortilla.
Notes
For a flavor variation, try using kielbasa, chorizo, or turkey sausage instead of Hungarian sausage. You can also substitute zucchini for mushrooms or use poblano peppers for a gentle heat. These wraps are equally delicious served hot or cold, making them perfect for next-day lunches.
For a complete meal, serve with a crisp green salad, sweet potato fries, or roasted broccoli. Leftovers can be refrigerated for up to 3 days.
