Ingredients
  

  • 3 cloves garlic minced
  • 1/2 green bell pepper sliced
  • 1/2 red bell pepper sliced
  • 3/4 cup button mushrooms sliced
  • 1/2 cup onion chopped
  • 2 Hungarian smoked sausages approximately 6-inch each, casings removed
  • 1/4 cup zesty Italian salad dressing
  • Salt and pepper to taste
  • 2 tortillas flour preferred

Method
 

  1. Brown the smoked sausages in a skillet over medium heat until they develop a golden crust.
  2. Add the sliced bell peppers, mushrooms, minced garlic, and chopped onion to the skillet with the sausages.
  3. Stir-fry the mixture for about 5 minutes, until the vegetables begin to soften but still maintain some texture.
  4. Pour in the zesty Italian dressing and allow it to bubble and reduce until almost completely evaporated, stirring occasionally to coat all ingredients.
  5. Season with salt and pepper to taste.
  6. Place one sausage and half of the vegetable mixture onto each tortilla.
  7. To wrap, tuck in the sides first, then roll from the bottom up, keeping the filling secure without tearing the tortilla.

Notes

For a flavor variation, try using kielbasa, chorizo, or turkey sausage instead of Hungarian sausage. You can also substitute zucchini for mushrooms or use poblano peppers for a gentle heat. These wraps are equally delicious served hot or cold, making them perfect for next-day lunches.
For a complete meal, serve with a crisp green salad, sweet potato fries, or roasted broccoli. Leftovers can be refrigerated for up to 3 days.
