- Preheat your oven to 375°F.
- In a large skillet, brown the ground beef with the sliced green onions until meat is no longer pink. Drain excess fat.
- Stir in the sloppy joe sandwich sauce and undrained can of corn with chopped peppers. Cook for 2-3 minutes until heated through, stirring occasionally.
- Transfer the hot mixture to an ungreased 1 to 1 1/2 quart casserole dish.
- Separate the refrigerated biscuit dough into 5 biscuits and cut each in half. Arrange the halves cut-side down around the edge of the casserole, making sure they touch each other.
- Bake for 15-20 minutes, or until the biscuits are puffed up and deep golden brown.
Notes
For a lighter version, substitute ground turkey or chicken for the beef. You can also use plain corn with separately added bell peppers if you can't find corn with peppers. For extra flavor, try sprinkling shredded cheddar cheese over the top before baking.
This casserole pairs wonderfully with a crisp garden salad, tangy coleslaw, or steamed vegetables. Leftovers can be refrigerated for up to 3 days and reheat beautifully in the microwave.
