A creamy, cheesy slow cooker chicken dish that's both effortless and incredibly delicious. Made with three types of cheese and Italian seasonings, this comfort food recipe creates tender chicken in a rich, velvety sauce perfect for serving over pasta, rice, or with crusty bread.

Ingredients
  

  • 2 pounds boneless skinless chicken breasts about 4-5 pieces
  • 1 cup chicken broth
  • 10.5 oz cream of chicken soup Halal-certified
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • cups shredded mozzarella cheese Halal-certified
  • ½ cup grated Parmesan cheese Halal-certified
  • 4 oz cream cheese cubed, Halal-certified
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Place chicken breasts in the bottom of the slow cooker in an even layer.
  2. In a medium bowl, whisk together chicken broth and cream of chicken soup until smooth.
  3. Add garlic powder, onion powder, Italian seasoning, salt, and black pepper to the bowl. Stir well.
  4. Add cubed cream cheese to the mixture (it doesn't need to fully incorporate).
  5. Pour the mixture over the chicken breasts in the slow cooker.
  6. Cook on low for 4-6 hours or high for 2-3 hours, until chicken is tender and reaches 165°F.
  7. 20 minutes before serving, remove lid and sprinkle mozzarella and Parmesan cheese over the chicken and sauce.
  8. Replace lid and cook until cheese is melted.
  9. Serve garnished with fresh chopped parsley.

Notes

For best results, use freshly shredded mozzarella as it melts more smoothly than pre-packaged. You can substitute chicken thighs for breasts for juicier meat. Add red pepper flakes for heat or vegetables like spinach, mushrooms, or sun-dried tomatoes in the last 30 minutes of cooking. The dish pairs well with pasta, rice, garlic bread, or roasted vegetables. Ensure all dairy products are Halal-certified if following Halal dietary guidelines.
