For the Pot Roast
  • 3-4 pound chuck roast
  • Salt and pepper to taste
  • 2 Tablespoons olive oil
  • 2 large yellow onions sliced
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 1 cup dry red wine
  • 1 ounce beefy onion soup mix packet
  • 3 Tablespoons cornstarch
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons thyme leaves minced
  • 2 bay leaves
  • Fresh herbs for topping

Method
 

  1. Use paper towels to thoroughly dry the chuck roast, then season it evenly with salt and pepper on all sides.
  2. In a large skillet, heat olive oil over medium-high heat. Place the roast in the pan and sear each side for 4–6 minutes, until a deep brown crust forms. Move the browned roast to the slow cooker.
  3. Scatter the sliced onions and minced garlic over the roast in the slow cooker.
  4. In a large bowl, whisk together beef broth, dry red wine, beefy onion soup mix, cornstarch, Worcestershire sauce, and minced thyme, making sure the cornstarch and soup mix are fully dissolved.
  5. Pour the prepared liquid mixture over the roast and sprinkle in the bay leaves on top.
  6. Cover and cook on the low setting for 8–10 hours, until the roast is extremely tender and shreds easily.
  7. Shred the beef into large chunks and serve topped with fresh herbs.

Notes

For a non-alcoholic version, replace the red wine with extra beef broth or a mix of broth and a splash of balsamic vinegar for acidity. Store leftovers in an airtight container in the refrigerator for up to 4 days, keeping the meat in its sauce to prevent drying. Reheat gently on the stovetop or in the microwave, adding a bit of broth if needed. This dish is excellent served over mashed potatoes or egg noodles, and makes great sandwiches with the leftovers. You can prepare the pot roast a day ahead; the flavor improves as it sits.
