Ingredients
  

  • 2 teaspoons smoked paprika preferably pimentón de la Vera
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • 1/4 teaspoon black pepper optional

  • Whisk

Method
 

  1. Measure all spices and brown sugar into a small bowl.
  2. Whisk ingredients together thoroughly, breaking up any clumps especially in the brown sugar.
  3. Continue mixing until you achieve a uniform mixture where all spices are evenly distributed.
  4. Use immediately or store in an airtight container.

Notes

Use about 1 tablespoon of rub per pound of meat or vegetables. For best results, pat proteins or vegetables completely dry before applying the rub. For variations, add ¼ to ½ teaspoon cayenne for more heat, or ½ teaspoon orange zest for brightness. The rub can be stored in an airtight container and remains fresh for several months. Great on chicken, pork, salmon, tofu, and roasted vegetables.
