- Make several small cuts around the edges of the bologna slices to prevent them from curling when cooked.
- Melt butter in a frying pan over medium heat.
- Place the bologna slices in the hot pan and fry until they reach your desired level of crispness, typically 2-3 minutes per side.
- During the last minute of cooking, place a slice of American cheese on top of each bologna slice and allow it to melt.
- Spread yellow mustard on both hamburger buns.
- Place the fried bologna with melted cheese onto the prepared buns and serve immediately.

Notes
For the most authentic Southern experience, don't substitute the beef bologna - Oscar Mayer truly does make a difference in flavor and texture. The sandwich is best enjoyed fresh off the stove while the bologna is still crispy and the cheese is perfectly melty.
For variations, try adding a fried egg on top, using garlic bologna for extra flavor, or swapping the mustard for mayo with hot sauce. This sandwich pairs wonderfully with potato chips, coleslaw, or baked beans, and is traditionally served with sweet tea or a cold Coca-Cola.
