Ingredients
  

  • 2 (6-ounce) Alaska sablefish steaks
  • 1 tablespoon lime juice
  • 1/4 teaspoon crushed oregano
  • 1 tomato chopped
  • 1/3 cup onion chopped
  • 2 tablespoons oil
  • 3 tablespoons green chilies diced
  • 1 dash sugar
  • 4 green pepper rings
  • 1/4 cup parsley chopped
  • Salt and pepper to taste
  • Cooked rice for serving
  • Lime wedges for garnish

Method
 

  1. Season the sablefish steaks with salt and pepper on both sides.
  2. For the oven method: Preheat oven to 450°F.
  3. In a sauté pan, heat the oil and cook the onion and green chilies until softened.
  4. Add the chopped tomato, parsley, lime juice, oregano, and sugar to the pan. Stir to combine.
  5. Place the seasoned fish in a baking dish and arrange the green pepper rings on top of the fish steaks.
  6. Pour the tomato mixture over the fish and peppers.
  7. Bake for approximately 10 minutes per inch of thickness, or until fish flakes easily with a fork.
  8. Alternatively, for the microwave method: Place seasoned fish in a microwave-safe dish.
  9. Combine all sauce ingredients (onion, green chilies, oil, tomato, parsley, lime juice, oregano, and sugar) in a bowl.
  10. Arrange green pepper rings on top of the fish and pour the sauce mixture over everything.
  11. Cover with microwave-safe plastic wrap and cook at medium power for 5 minutes.
  12. Rotate the dish a quarter turn and continue microwaving at medium power for another 5-6 minutes until the fish flakes easily.
  13. Serve the fish and sauce over cooked rice and garnish with lime wedges.

Notes

This dish is incredibly versatile - if you can't find sablefish, try substituting black cod, sea bass, or halibut. For a spicier version, use jalapeños instead of mild green chilies. The microwave method is perfect for hot days when you don't want to heat up the kitchen, while the oven method develops slightly deeper flavors.
Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently to avoid overcooking the fish.
