Ingredients
  

  • 1 kg skinless chicken pieces trimmed of fat
  • 1 onion sliced
  • 1 packet French onion soup mix 45g, or chicken noodle soup mix
  • 1 can apricot halves in juice 840g
  • 125 g green beans trimmed, fresh or frozen
  • flour optional, for dusting chicken if browning first
  • noodles or potatoes for serving

Method
 

  1. Preheat oven to 350°F (180°C).
  2. Arrange the skinless chicken pieces in a large casserole dish, ensuring they have enough space for the sauce to surround them.
  3. Scatter the sliced onion evenly over the chicken pieces.
  4. Sprinkle the French onion soup mix over the chicken and onions.
  5. Pour the entire can of apricot halves with all their juice over everything in the casserole dish.
  6. Cover the dish and bake for about 60 minutes, or until the chicken is tender and thoroughly cooked.
  7. During the last few minutes of cooking, add the green beans to the dish and stir through to warm them.
  8. Serve immediately with noodles or potatoes to soak up the delicious sauce.
