Ingredients

For the Seafood Boil
  • 1 lb large shell-on shrimp
  • 1 lb snow crab legs or king crab
  • 1 lb mussels or clams scrubbed
  • 12 oz halal beef sausage sliced
  • 1 lb baby potatoes
  • 4 ears corn halved
  • 2 lemons one halved for the boil, one for squeezing at the end
  • 1/4 cup Old Bay seasoning
  • 2 tbsp Cajun seasoning
  • 2 tbsp kosher salt
  • 1 tbsp garlic powder
  • 2-3 bay leaves
  • 1-2 cups chicken or vegetable broth optional, for the boil
For the Garlic Butter Sauce
  • 1 stick unsalted butter ½ cup
  • 6 cloves garlic minced
  • 1 tbsp Cajun seasoning
  • 1 tsp Old Bay
  • 1 tsp smoked paprika
  • 1/2 lemon juiced
  • 1 tsp hot sauce or red pepper flakes optional
  • chopped parsley optional, for garnish

Equipment

  • Large stockpot (8-quart or larger)
  • Colander
  • Small saucepan
  • Large bowl or roasting pan
  • Tray or butcher paper
  • Knife and cutting board

Method

  1. Fill a large (8-quart or larger) stockpot about halfway with water. Add kosher salt, Old Bay, Cajun seasoning, bay leaves, garlic powder, and one halved lemon to the pot. Bring the mixture to a rolling boil, adding chicken or vegetable broth if desired.
  2. Place the baby potatoes in the boiling liquid first and cook for 10 to 12 minutes, or until they just start to soften.
  3. Add the halved corn ears and sliced halal beef sausage to the pot with the potatoes. Boil for an additional 5 minutes.
  4. Next, add the crab legs and mussels to the pot. Continue to boil for 5 more minutes.
  5. Finally, add the shrimp to the pot and cook for 2 to 3 minutes, or just until they turn pink. Drain the seafood, sausage, and vegetables immediately.
  6. While the seafood boils, melt the butter in a small saucepan over medium heat. Add minced garlic, Cajun seasoning, Old Bay, smoked paprika, and lemon juice. Let the mixture simmer for about 2 minutes, stirring occasionally, until fragrant. Stir in hot sauce or red pepper flakes if using.
  7. Transfer all the drained seafood, sausage, potatoes, and corn into a large bowl or roasting pan. Drizzle the prepared garlic butter sauce over everything and toss gently to coat, or serve the sauce separately for dipping.
  8. Spread the seafood, sausage, potatoes, and corn out on a tray, butcher paper, or a large platter. Garnish with lemon wedges, chopped parsley, and extra seasoning as desired.

Notes

You can substitute other shellfish (such as lobster tails or crawfish) or use any preferred sausage if you can’t find halal beef. Prep ahead by slicing sausage, halving corn, and mincing garlic, but boil everything just before serving for best texture. Leftovers keep in an airtight container in the fridge for up to two days. To reheat, warm gently on a baking sheet in a 350°F oven, or microwave briefly; avoid reheating in boiling water. Freezing is not recommended as the seafood and vegetables may become mushy. Serve with plenty of crusty bread to soak up the flavorful butter sauce.
