Ingredients

Wet Ingredients
  • 1 cup butter softened
  • 1 cup light brown sugar
  • 1 large egg
  • 1 cup molasses not blackstrap
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons vanilla extract
Dry Ingredients
  • 5 cups flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg

Equipment

  • Electric mixer
  • Large mixing bowls
  • Whisk
  • Rolling Pin
  • Cookie cutters
  • Baking sheets
  • Parchment paper or silicone baking mats
  • Wire cooling rack

Method

  1. In a large bowl, cream together the softened butter and brown sugar on medium-high speed with an electric mixer until thoroughly blended. Add the egg, molasses, apple cider vinegar, and vanilla extract. Mix at medium-low speed until the mixture is smooth and fully incorporated.
  2. In another mixing bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, allspice, cloves, and nutmeg until all the spices are evenly distributed.
  3. Gradually add the dry ingredients to the wet ingredients. Mix on low speed just until the dough comes together and no flour remains. Do not overmix.
  4. Cover the bowl and refrigerate the dough for a minimum of 3 hours, or overnight for best results. If chilled overnight, let the dough sit at room temperature for about 15 minutes to make it easier to roll.
  5. When ready to bake, preheat your oven to 350°F (175°C).
  6. Split the dough into two portions. On a lightly floured surface, roll each piece out to 1/4-inch thickness.
  7. Use cookie cutters to cut shapes from the dough and arrange the cookies on lined baking sheets, spacing them about 1 inch apart. Group cookies of similar size on the same baking sheet for even baking.
  8. Bake cookies one sheet at a time. Bake medium-sized cookies for 8–10 minutes, large cookies for 12–14 minutes, and smaller cookies for 6–8 minutes. Cookies are ready when they gently spring back when touched. Avoid overbaking.
  9. Let cookies cool on the baking sheet for a couple minutes, then move to a cooling rack until fully cooled before decorating.

Notes

These gingerbread cookies stay soft for several days if stored in an airtight container at room temperature; adding a slice of bread to the container helps them retain moisture. The dough can be made ahead and chilled overnight, or frozen for up to three months—just thaw in the refrigerator before rolling. Be sure to use dark molasses (not blackstrap) for the best flavor. For a festive touch, decorate with royal icing or powdered sugar once cool. Cookies freeze well after baking and thaw in about 30 minutes at room temperature.
