Ingredients

Main Platter
  • 4 slices crusty bread such as cottage loaf, or use 2 large crusty bread rolls
  • fresh salted butter to taste
  • 40 g blue cheese
  • 40 g mature Cheddar cheese or Red Leicester
  • 40 g goat's cheese or soft rind cheese
  • 6 slices halal smoked turkey breast
  • 4 large pickled onions
  • 4 tablespoons homemade chutney or use Branston pickle, Pan Yan Pickle, or Ploughman's pickle
  • 8 gherkins
  • 2 tomatoes quartered
  • 2 celery sticks
  • 1 crisp apple cored and cut into quarters
  • salt and pepper to taste

Equipment

  • Large platter or plate
  • Sharp knife
  • Cutting board

Method

  1. Place the sliced bread or bread rolls on a large plate or platter and add butter as desired.
  2. Arrange the three types of cheeses next to the bread, keeping them separate. Add the smoked turkey breast slices to the plate.
  3. Position the pickled onions, chutney, and gherkins on the side of the platter. Add the quartered tomatoes, celery sticks, and apple quarters.
  4. Serve with salt and pepper on the side for seasoning. Enjoy with sparkling grape juice or non-alcoholic cider, if desired.

Notes

This meal is best served with cheeses at room temperature to highlight their flavor and texture. You can prepare the components a few hours ahead and store separately, assembling the platter just before serving—slice apples last or toss with lemon juice to prevent browning. Swap the smoked turkey for ham, roast chicken, or omit the meat for a vegetarian option. Use any rustic crusty bread; gluten-free rolls with a firm structure also work. Store leftover cheeses wrapped in wax paper in the fridge, and keep the bread in a bag at room temperature for up to two days.
