  • 1 cup salsa homemade or store-bought
  • 0.75 cup vegan sour cream
  • 0.5 cup vegan shredded cheese
  • 3 cups shredded lettuce
  • 3 cups cooked brown rice seasoned with salt and 1 teaspoon cumin
  • 6 large flour tortillas use gluten-free if needed

Equipment

  • Medium bowl
  • Cutting board
  • Sharp knife
  • Aluminum foil

Method

  1. Drain and rinse both the black beans and corn. In a medium bowl, combine them with paprika powder, smoked paprika, cumin, lime juice, salt, and pepper. Stir in the sliced green onions and chopped cilantro until well mixed.
  2. Place a large flour tortilla flat on a plate. Spoon some of the seasoned rice into the center, then layer the bean and corn filling over the rice. Add salsa, lettuce, vegan shredded cheese, vegan sour cream, and guacamole on top. Optionally, you may sprinkle red pepper flakes for added heat.
  3. Fold the sides of the tortilla toward the center, then roll it up tightly to enclose the filling. Wrap each burrito in foil to help it keep its shape, and slice in half with a sharp knife before serving.

Notes

These burritos are highly customizable: swap the flour tortillas for gluten-free ones if needed, or use homemade guacamole and salsa for extra freshness. Prepare the bean and rice mix up to two days ahead, storing components separately for easy assembly. For best results, warm the tortillas before rolling to avoid tearing. Store leftovers wrapped in foil in the fridge for up to two days and reheat in the oven or a skillet. Serve with tortilla chips, extra salsa, or a light salad for a complete meal.
