Method
- Ensure cream cheese is properly softened to room temperature to prevent lumps.
- Beat the cream cheese for 30-60 seconds until smooth and fluffy.
- If using fresh strawberries that are particularly juicy, pat them dry with paper towels to prevent a runny spread.
- Add the blended or finely mashed strawberries to the whipped cream cheese.
- Mix in powdered sugar, vanilla extract (if using), and a tiny pinch of salt (if using).
- Beat everything together until the mixture turns a light pink color, tasting and adjusting sweetness as needed.
- If using, fold in crushed freeze-dried strawberries for more intense flavor and color.
- Chill the spread for 20-30 minutes to allow it to firm up slightly and let the flavors meld.
- Optional: Transfer to a serving bowl and garnish with small diced fresh strawberries before serving.

Notes
For a lighter version, substitute Neufchâtel or Greek yogurt cream cheese. Add a bright twist by incorporating lemon zest and a small squeeze of juice. For extra texture, fold in some finely diced fresh strawberries at the end.
This spread will keep in an airtight container in the refrigerator for up to 5 days. The natural color may darken slightly over time, but the flavor remains delicious.
Serve on bagels, English muffins, toast, graham crackers, or use as a dip for fresh fruit. It also makes a wonderful topping for pancakes or waffles.
