Ingredients
  

  • 1 liter water about 4 cups
  • 25 g bay leaves about 10-12 leaves
  • 25 g black pepper about 2 tablespoons, lightly crushed
  • 25 g cinnamon about 3-4 sticks, broken into pieces
  • 20 g cloves about 2 tablespoons
  • 5 g fresh ginger about 1 inch piece, sliced or grated
  • 100 g honey about 1/3 cup, preferably raw and unfiltered

Method
 

  1. Bring water to a rolling boil in a medium-sized pot.
  2. Add the fresh ginger, cinnamon, cloves, black pepper, and bay leaves to the boiling water.
  3. Allow the mixture to return to a boil, then reduce heat and simmer for 5-10 minutes until the water takes on a rich amber color.
  4. Remove from heat and stir in the honey until completely dissolved.
  5. Strain the tea through a fine-mesh sieve into mugs or a teapot, removing all the whole spices.
  6. Serve hot, garnishing with a cinnamon stick or slice of fresh ginger if desired.

Notes

For a milder flavor, substitute cardamom for black pepper. Star anise works well in place of cloves, and dried orange peel can replace bay leaves for a citrusy twist.
This tea can be made ahead and stored in the refrigerator for up to 3 days. Reheat gently before serving or enjoy cold over ice during warmer months.
For a caffeine boost, try brewing this with black tea as the base instead of plain water.
