  • 1 tablespoon olive oil
  • 1 teaspoon sugar

  • 1/2 teaspoon marine salt
  • 1 whole chicken, jointed or 2 pounds of breast fillets
  • 1 large onion finely chopped
  • 2 tablespoons rich soy sauce or ketjap manis
  • 3 cloves garlic crushed
  • 4 tablespoons tomato puree or tomato sauce

Method
 

  1. Gather all ingredients and combine them in a large mixing bowl.
  2. Mix thoroughly until the sauce reaches a dark orange color. If it appears too dark, add a bit more tomato puree to lighten it.
  3. For oven baking: Transfer the chicken and sauce mixture to a covered baking dish and bake at 375°F for 35-40 minutes, or until chicken is fully cooked.
  4. For microwave cooking: Place everything in a microwave-safe casserole with a lid. Cook on high for 10 minutes, then let stand for 5 minutes to finish cooking in the residual heat.
  5. For grilling: Grill chicken pieces while basting regularly with the sauce. Note that this method creates a different end result without the saucy finish of other cooking methods.
  6. Serve hot with your choice of sides. Basmati rice and peas are particularly recommended as they complement the sauce perfectly.

Notes

Bone-in chicken pieces develop more flavor during cooking than boneless options, especially when grilling. The Colman's mustard powder is essential for authentic flavor - substitutions won't deliver the same distinctive taste.
