Ingredients
  

  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • 1/2 cup creamy peanut butter
  • 2 cups small marshmallows
  • 1 cup pretzels crushed
  • 1 cup mini butter cookies or graham cracker pieces
  • 1/2 cup peanuts or mixed nuts chopped
  • 1/2 cup shredded coconut optional
  • 1 teaspoon non-alcoholic vanilla extract
  • 1 pinch salt

  • Large heat-safe bowl
  • Baking sheet
  • Parchment paper

Method
 

  1. In a medium saucepan over low heat, melt semi-sweet chocolate chips, white chocolate chips, and peanut butter together, stirring continuously until smooth and glossy.
  2. Remove from heat and stir in vanilla extract and salt.
  3. In a large heat-safe bowl, combine marshmallows, crushed pretzels, butter cookies or graham cracker pieces, chopped nuts, and shredded coconut (if using).
  4. Pour the warm chocolate mixture over the dry ingredients and gently fold everything together until all pieces are coated.
  5. Line a baking sheet with parchment paper and spoon small mounds of the mixture onto it.
  6. Let cool completely at room temperature or refrigerate until set.

Notes

These candies are highly adaptable - feel free to substitute ingredients based on what you have. Potato chips can replace pretzels, any type of nuts work well, and dark chocolate can be used instead of semi-sweet for a more sophisticated flavor. Store in an airtight container at room temperature for up to a week, or refrigerate for longer storage. For gifting, package in vintage tins or decorative boxes. Pairs wonderfully with coffee, milk, or served alongside fresh fruit.
