Ingredients
  

  • 4 boneless skinless chicken breasts about 6 oz each
  • 1 tablespoon olive oil
  • 3 tablespoons butter divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 medium onion thinly sliced
  • 1 cup mushrooms sliced
  • 1 cup mozzarella cheese shredded
  • 1/2 cup cheddar cheese shredded
  • parsley chopped, for garnish (optional)

  • Paper towels
  • Small bowl
  • Aluminum foil

Method
 

  1. Pat chicken breasts dry with paper towels.
  2. Mix together garlic powder, onion powder, paprika, black pepper, and salt in a small bowl.
  3. Rub the seasoning mixture generously on both sides of each chicken breast.
  4. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
  5. Cook chicken for 5-6 minutes per side until golden-brown and internal temperature reaches 165°F. Transfer to a plate and tent with foil.
  6. In the same skillet, add remaining 1 tablespoon butter, sliced onions, and mushrooms.
  7. Sauté vegetables for 5-7 minutes until onions are translucent and mushrooms are golden brown.
  8. Return chicken to the skillet, nestling pieces among the vegetables.
  9. Top each chicken breast with mozzarella and cheddar cheese blend.
  10. Cover skillet and let sit until cheese melts completely.
  11. Garnish with chopped parsley if desired and serve.

Notes

For best results, use chicken breasts of similar size or pound them to even thickness. While pre-shredded cheese is convenient, freshly grated cheese will melt more smoothly and provide better flavor. The chicken can be served with garlic mashed potatoes, buttered rice, steamed broccoli, or a side salad. Perfect for both special occasions and weeknight dinners.
