- Pat chicken breasts dry with paper towels.
- Mix together garlic powder, onion powder, paprika, black pepper, and salt in a small bowl.
- Rub the seasoning mixture generously on both sides of each chicken breast.
- Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
- Cook chicken for 5-6 minutes per side until golden-brown and internal temperature reaches 165°F. Transfer to a plate and tent with foil.
- In the same skillet, add remaining 1 tablespoon butter, sliced onions, and mushrooms.
- Sauté vegetables for 5-7 minutes until onions are translucent and mushrooms are golden brown.
- Return chicken to the skillet, nestling pieces among the vegetables.
- Top each chicken breast with mozzarella and cheddar cheese blend.
- Cover skillet and let sit until cheese melts completely.
- Garnish with chopped parsley if desired and serve.
Notes
For best results, use chicken breasts of similar size or pound them to even thickness. While pre-shredded cheese is convenient, freshly grated cheese will melt more smoothly and provide better flavor. The chicken can be served with garlic mashed potatoes, buttered rice, steamed broccoli, or a side salad. Perfect for both special occasions and weeknight dinners.
